Here are five simple and healthy baking recipes based on milk that you can easily make at home.

Yogurt

Begin by placing raw milk in a bowl and allowing it to ferment under the sun for a few hours or at room temperature for 24 hours. In another pot, boil the milk that will be used to make yogurt. Once cooled, add a spoonful of the previously fermented milk and stir. Leave it at room temperature for 24 hours (or about 6 hours in summer). Remember not to stir the fermented milk during this period. When you achieve the desired level of sourness, refrigerate the yogurt and enjoy it by adding sugar or jaggery water.

Fried Milk

In a bowl, thoroughly mix 120 grams of corn flour and 100 grams of sugar with 1 liter of milk. Stir it well and continue stirring over heat. When it thickens and evaporates, pour it into a square pot greased with oil. Cover it with plastic wrap and refrigerate for 2 hours. After the 2 hours, the milk paste in the square pot will be frozen and have a chewy texture. Cut the milk paste into finger-sized pieces and dip them into a mixture of flour prepared earlier. Then, coat them with breadcrumbs and fry until the surface turns golden. Remove the fried milk from the container. It will have a creamy milk interior and a crispy exterior, making it a delightful treat for both children and adults.

Dried Milk

To make dried milk, start by heating the milk until it becomes warm. Then, add an equal amount of vinegar and water to the heated milk. While stirring continuously, the milk will separate into liquid and paste. Gather all the paste and rinse it with water. Mold the paste with your hands to form a firm milk block, and flatten it with a chopstick. Place it in a flat pot and dry it to your desired thickness. You can choose to dry it either in the sun or in the oven. Once completely dry, store it in clean packaging in the refrigerator. You can enjoy it as fried dried milk or simply as dried milk.

Milk Jam

To make milk jam, you only need milk, sugar, and a small amount of butter. Use a large pot to prevent the milk from spilling over when it boils. After boiling, reduce the heat and let it simmer until it thickens, stirring to prevent sticking to the bottom of the pot. Once the milk has been boiled for over an hour, add sugar and butter to taste. After another half an hour or when the mixture has thickened and reduced slightly, turn off the heat. Let the milk jam cool, transfer it to a dry container, and store it in the refrigerator. It can be enjoyed with bread or it alone.

Paneer

If you love paneer, a popular food in the middle part of Myanmar, you can make it at home using this method. Boil the milk as usual. To separate the milk into liquid and solid parts, add vinegar or lime water to the boiled milk. Keep it on the stove and boil it gently while stirring repeatedly to avoid boiling over. Next, filter the liquid and solid through a white cloth into a pot. Squeeze the cloth to remove any remaining liquid from the milk paste. You can also place something heavy on the cloth to help separate the liquid for a few hours. Even after filtering, some moisture may remain on the surface of the milk paste, so it needs to be heated to remove the moisture. After following these steps, you'll have paneer that you can enjoy on its own, with sugar, or in a paneer curry with a tomato mixture.
